扇貝用生粉及牙刷洗淨,去內臟,扇貝肉用刀起出。

粉絲浸軟,瀝乾。

把一半粉絲鋪在碟上,再放上扇貝殼,再鋪上粉絲。然後放上扇貝肉,每隻平均地放上一半蒜蓉及辣椒粒。

放入蒸爐蒸8分鐘後取出。

準備醬汁:燒熱油鑊,加入蒜蓉、乾蔥蓉爆香,再加入其餘汁料煮滾後熄火,淋上扇貝上,即成!
