馬蹄有清熱生津的作用,對多飲多尿的糖尿病者,有養生作用。馬蹄亦含有磷質,有利兒童牙齒骨骼的發育。購買馬蹄時,最好選購帶皮,外表完整略帶泥沙的,會較新鮮。

馬蹄去皮洗淨,放入保鮮袋用刀背拍扁切碎,備用。

取一鍋子,放入清水及冰糖煮滾,再加入馬蹄碎,小火煮約6分鐘。然後加入檸檬汁。
